Since our founding, Hinterland has focused on reconnecting people with food, farming, and one another, through acts of growing, sharing, learning, and imagining. From donating farm produce to local community groups, to mapping Galway’s food web, to hosting gatherings, our work lives at the intersection of land, care, and collective resilience

MAPPING PROJECT

Our work is a contribution to a more inclusive, resilient, and regenerative food system, one rooted in care, culture, and connection.

URBAN ROOFTOP GARDEN

The Rooftop Garden Project is
rooted in agroecological principles, this pilot project is located in one of Galway’s most traffic-congested urban districts, offering not just visual and ecological relief, but a model for sustainable city living.
We collaborated with Galway City Partnership & City Bin so that all compost used for the garden comes from the city’s municipal brown bin collections.

Designed as both a climate intervention and a community resource, the rooftop garden will enhance biodiversity and grow food, while also creating opportunities for shared learning and skills development.

The space will serve as a learning hub, showcasing the possibilities of circular, regenerative approaches to food and land use in the heart of the city.

FOOD ASSEMBLY

The Food Assembly is where food, culture, creativity, and policy meet. Anchored by Hinterland, it’s an engine for connection, co-creation, and systemic change.

Food Assembly aims to bring together growers, makers, eaters, researchers, and policymakers. Together, we explore what a just, sustainable, and regenerative food system could look like, locally and beyond.

At its heart, it is designed not only to celebrate community food knowledge but to generate grounded insights that inform better food policy.

Through participatory events, dialogue sessions, and real-time learning from lived experience, the project creates a platform to engage with decision-makers in meaningful, ongoing ways.
